The concentrate (paste; comes in a jar--don't get the pulp that comes in blocks) lasts a long time in the refrigerator. It's a great, all- around, tart flavor-enhancer. I use it to " perk up " stews, soups, gravies, and sauces that seem a bit bland. It's like the oft- recommended squeeze of lemon, but much more versatile and easier to store.
