Guest guest Posted October 31, 2005 Report Share Posted October 31, 2005 * Exported from MasterCook * Mac and Cheese Florentine Recipe By :Robin Robertson Serving Size : 4 Preparation Time :0:00 Categories : Crockpot Main Dishes Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces elbow macaroni 10 ounces frozen spinach -- chopped, cooked according to package directions, well drained 2 tablespoons olive oil -- *see Note 1 medium yellow onion -- chopped 1/2 cup cashews -- unsalted, raw 1 3/4 cups water 1 1/2 cups white beans -- if canned - drained & rinsed 1 tablespoon white miso -- optional 2 teaspoons fresh lemon juice 1/4 teaspoon dry mustard 1/4 teaspoon cayenne pepper -- 1/2 " cubes 1 pinch ground nutmeg salt -- *see Note 1/2 cup dry breadcrumbs 1. Cook the macaroni in boiling water until al dente, about 8 minutes. Drain and place in a large bowl. Add spinach and toss to combine. Set aside. 2. Heat the oil (or water or broth) in a skillet and cook the onion until softened, about 5 minutes. 3. Grind the cashews to a powder in a blender or food processor, add 1 cup of water and blend until smooth. Add the onions, beans, miso paste, the remaining 3/4 cup water, lemon juice, mustard, cayenne, nutmeg, and season with salt (see note). Blend until smooth, taste to adjust seasonings and salt. Pour over the macaroni and spinach and mix well. 4. Transfer the mixture to an oiled 4-quart slow cooker. Cover and cook on low for 3 hours. 5. Close to serving time, heat the remaining oil in a skillet and add the breadcrumbs, mix well to coat the crumbs. Cook and stir for 3-4 minutes to toast. When ready to serve, sprinkle the crumbs on top of the casserole.
