Guest guest Posted November 7, 2005 Report Share Posted November 7, 2005 * Exported from MasterCook * Greek Big Beans Recipe By :Robin Robertson Serving Size : 4 Preparation Time :0:00 Categories : Beans Crockpot Low-Fat Main Dish Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large yellow onion -- chopped 3 cloves garlic -- minced 3 cups butter beans -- or lima; fresh, canned or frozen 28 ounces canned tomatoes -- with juices, diced salt and pepper -- to taste 1/2 cup minced fresh parsley 1. Sauté the onion in water in a skillet until softened, then add the garlic and cook until the garlic is soft, an additional minute. 2. Transfer the sautéed mixture to a 3 1/2 - 4 quart slow cooker and add the beans, tomatoes & their liquid, and salt & pepper. Stir well to combine. 3. Cook on Low for 4 to 6 hours. Just before serving stir in the parsley. Personally though, I like to add the dry (soaked or unsoaked) beans to the crockpot, and then cook on low for 10-12 hrs. The beans come out so fresh and good. I just made a soup by throwing in what I had on hand -- some big white beans, a large sweet potato, an onion, some dulse, and some kombu (kelp). It cooked for about 11 or 12 hrs. The beans become all broken down, and part of the broth, and the seaweed (dulse and kombu) added a very nice, tangy taste. Overall, it was better than I expected. But I forgot to add the leek.
