Need recipe help - those black eyed peas

One down, one more major winter holiday to go!

 

It was just pointed out to me that this recipe has no extra liquid added to

cook the peas in. I usually just dump a can of diced tomatoes with the

liquid instead of fresh tomatoes and never noticed the lack.

 

Does anyone have a suggestion as to how much liquid, if any, should be

added? Maybe 2 cups of water, broth, or even tomato juice, right, as the

crockpot doesn't allow evaporation of cooking liquids?

Chilean Black-Eyed Peas & Winter Squash

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 lb dried black-eyed peas

2 lbs winter squash, peeled -- cut into

1 chunks (acorn, butternut, etc.)

2 onions -- chopped

5 cloves garlic -- minced

1 Tbsp dried oregano

1 Tbsp paprika

1 tsp chili powder

1/2 tsp cumin seeds

1/2 tsp coriander seeds

3 bay leaves

1/4 tsp black peppercorns

1/2 fresh chile -- minced

2 large tomatoes -- chopped

Salt

2 c frozen or fresh corn kernels

 

Soak the black-eyed peas overnight. Put all ingredients except the salt

and the corn in the crock pot, and stir to mix well. Cook on low for 8

hours. Add corn and salt, heat through, and serve alone, with corn bread

or with a loaf of crusty French bread, or over rice.

NOTES : 248 calories per serving. 2 g fat. 6% fat

Sue, you said you normally put canned diced tomatoes in? I'd say there's

what--maybe a cup of liquid in a can of diced tomatoes? Maybe you could measure

it to be sure. I'd definitely add something tomatoey as far as liquid goes to

this recipe, since there's cumin and chili powder in it! :)

Every time I made the recipe I used canned and never added any other liquid,

so I never noticed it didn't have any liquids listed in the ingredients.

After I posted the recipe someone emailed me telling me there was no added

liquid, what should she do, assuming she's using whole tomatoes. I told her

what *I* do, but said I would ask around for alternatives, hence the message

to the list. :)

 

A few people replied to my plea and I forwarded them to her, ASAP, since she

wanted to make the recipe yesterday (Thursday) for a party she was

attending.
