Does anyone have any favorite and inexpensive vegan recipes/tips?

Good day, i am looking for ways to save money. I am looking for recipes and

tips on how to feed my family for as little money as possible. I do have some

recipes, but more are very welcome. We have only been a vegan family for a short

time so I am sure that there is tons that we do not know yet. I am enlisting the

wisdom of other vegans who are further along the path so to say. Thank you,

That does sound like a great idea. How long do you cook it for and how much?

Barb said she thought that it sounds like it would be good with rice, i agree.

black beans, rice and salsa is absolutely one of my

most favorite comfort meals! Yum!

Oh yes. My mom makes a rice dish in her crockpot with chopped tomatoes, corn,

beans and vegetable broth. Add whatever your spices are and you have another

cheap, filling meal. There aren't any exact measurements, just go with whatever

things you like most in the greatest quantity.

Usually I use dry beans so I soak them overnight and then cook them all day in

the crockpot just covered with water. Mine gets really hot so I've also had

them turn out really well by putting them on high for a couple of hours. I used

to cook the salsa in it all day but I found I liked the texture and the salsa

was a bit stronger (not spice-wise, just tastier) if I put it in in the last

hour or so. Didn't get cooked down quite so much, either.

 

As for how much it really depends on how big a salsa/bean ratio you like. I

like quite a bit of salsa so I'd do several cups of beans and then a big jar of

salsa in it.

 

What do I use it for? I eat just like that...in a bowl. :) Beans are fantastic

sources of fiber and protein so I eat a lot of them (very inexpensive, too).

But, it would probably make a really good rice casserole or a dip, even. I

think it would probably also be good with a bag of frozen corn thrown in, sort

of like a bean chowder.

 

I think you might also be the person looking for ideas for your picky child who

needs to gain weight? I might avoid a lot of bean dishes since they're perfect

diet food - all that fiber fills you up quickly and helps you eat less. Now, if

you put it with some tortilla chips...that would be really yummy, too, and more

fattening (in which case I would suggest more salsa to make it more dip like).

Thanks for your long answer karey :-) My daughter does not like salsa either,

nor does she like baba ganouj, guacamole or hummus. Mckayla is hard to feed. I

am going to make your bean salsa for supper tomorrow. I think that I might use

it to make burritos. I might be able to slip the salsa to her that way lol. THe

rest of us love salsa. ~Shell

Oh dear. Well...take heart. When he was a kid, my brother wouldn't TOUCH

anything " weird " which was...pretty much everything. He was a thin child but

most doctors would say there are fewer health risks associated with being

slightly underweight than being overweight. Now in his early 30s, he's pretty

adventurous and eats just about anything...and his waistline reflects it ;)

 

I think burritos are a great idea! You could always throw in some rice, too.

 

Man...life without guacamole! Well, someday she'll realize what she's missing

out on :) You're a good mom for trying so hard with her. I'm sure she's a

great kid :)

I didn't know about the vegan crock pot group. I just joined it after reading

your email. We were talking about

vegslowcooker/

 

It has good recipes/ideas, although not necessarily vegan.

Yes, I saw that. But I also saw that there have only been a few
