Guest guest
Great idea Heather! I use whizzed silken tofu in place of eggs. This might be a better idea for you as silken tofu has fat naturally. You might also try some marinated tofu as snacks. Here's a website that gives ideas for egg replacers, including the whizzed tofu. http://www.theppk.com/veganbaking.html Of course just about any food has fat in it so focusing on fat may not be the best. You could try to get more carbs down her like fruits & whole grains. Hmm...maybe a cold fruit and pasta (or other grain) salad? Maybe make the dressing out of blended fruits. :} Take care, Tammy - hcrans Monday, January 09, 2006 11:19 AM Re: My picky child really needs to gainweight hi shelly, i have VERY picky kids too and the way i get a TON of good stuff, including fat, in them is through MUFFINS!!! i make the muffins with a couple of TBLS of oil and i add either wheat germ or oats. i basically follow any muffin or bread recipe (i just make them i nmuffin tins always since that form appeals to my kids) and substitute soy milk for milk and egg replacer (either wonderslim liquid or enerG powder made into liquid - i like enerG a bit better) for egg. i also add zuchinni, carrot, banana and other fruits and veggies. i have just done some searches for vegan recipes and then it is easy to come up with some muffin recipes. basically, the oil in it is great for the fat and everything else is healthy and great for weight gain! good luck! heather
