Just soak the beans overnight and throw them in the crockpot in the morning along with an chopped onion, bell pepper, 4 or 5 cloves of garlic, some shredded cabbage and seasoning and you have a great soup when you get home from work. It's 100% vegan. I also make a vegetable soup with salsa. Cut up some potatoes, add some left over vegetables (or frozen mixed veggies) a jar of salsa, some water and seasoning. Let it cook all day in the crockpot and you have some great veggie soup. A variation of this is using coconut milk instead of salsa. It makes a great creamy vegetable soup.
