Guest guest
Karyn, My small crockpot has a low setting, but I find that even on the low setting overnight is just too long for oatmeal, even steel cut oats. I use a timer with mine (just a simple timer like you'd use to turn a light on when you're away from home) and set it to turn the crockpot on about 4 hours before I plan to eat breakfast. This seems to cut down the overcooking a lot. Also, being a bit over-generous with the water helps with overcooking, too; it may come out a bit wetter than you're used to, but you might like it anyway. I've wondered about putting the oatmeal and cooking water in a heat-proof bowl that will fit in the crock and putting an inch or two of water in the crockpot itself, and then putting the bowl in the water, sort of like a double boiler, and cooking it that way. I haven't tried, it though. Good luck!
