Guest guest Posted March 24, 2006 Report Share Posted March 24, 2006 * Exported from MasterCook * Vermont-style Yellow-eye Beans Recipe By :Janet Serving Size : 6 Preparation Time :0:00 Categories : Beans & Legumes Crockpot Main Dish Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups water 3 bay leaves -- (3 to 4) 1 large onion -- chopped 1 pound yellow beans -- or navy beans 1 tablespoon dry mustard 1/2 teaspoon black pepper 2 teaspoons salt 1/8 teaspoon cayenne 1/4 cup brown sugar 1/4 cup molasses 1 tablespoon Worcestershire sauce -- vegetarian style 3 tablespoons cider vinegar Put beans, water, bay leaves into slowcooker set on high. Cook for 2-3 hours. Add onion. Mix together the rest of the ingredients, pour into beans. Cook for another 2 hours or so, with the lid propped slightly open with a wooden spoon. When beans are tender, turn off cooker and take lid off to cool slightly before serving.
