Hi Folks,

Here's a recipe I made up for Chicken-less Noodle Soup. I tried to measure the

ingredients this time so that I could write down how to make it. You can tweak

it anyway that works for you. I normally serve it with crackers and salad or a

grilled cheese sandwich depending on how hungry everyone is. I've made this in

a crock pot, also. I throw everything in a crock pot after the sautéing is

done, set it on low for about 6 hours or high for about 3-4 hours. If you try

it, I hope you enjoy it.

Mom's Chicken-Less Noodle Soup

 

3 - 1 lb 2 oz containers chicken-style seitan with liquid (cut or tear

seitan into bit sized pieces) (I used White Wave )

2 - 32 oz boxes chickenless broth (I used Imagine's No Chicken Broth)

1 tbls dried basil

1 tbls garlic granules/powder

1/4 cup nutritional yeast

1 onion - chopped

4 stalks celery - washed and chopped

4 med carrots - washed and thinly sliced (peel if not organic)

1 med onion - peeled and chopped

10 - 12 oz eggless wide pasta ribbons or broken spaghetti

Salt and Pepper (if desired) to taste

 

Directions:

 

1. Combine first five ingredients in a large soup kettle or Dutch oven.

 

2. Sauté the next four ingredients in your choice of sautéing liquids until

onions start to become clear (about 10 minutes).

 

3. Add veggies to seitan mixture and cook over med heat until veggies are on

the soft side.

 

4. Add pasta and continue cooking until pasta is done.
