Hi everyone! I'm kinda new here. I've been a vegetarian for 20 years, and have

recently decided to go 100% vegan. The only thing I'm having a little trouble

giving up is cheese. Sooo, I was wondering if anyone here has any favorite

vegan " cheeses " they can recommend? I'm hoping to find something that will melt

well in things like quesadillas and grilled " cheese " sandwiches. I was looking

at the so-called nondairy cheeses in my local health food store and was dismayed

to find things like milk solids in them! EEK! I might as well eat regular

cheese! Anyway, any suggestions would be much appreciated. I know I ought to

just go cold turkey and cut out cheese and cheese alternatives, but I'm having

such a hard time that I think I need to wean myself more gradually. Thanks!

Fried onions is what did it for me (you know, like what they use in

green bean casseroles). I use the Walmart store brand as it doesn't

have the transfat kind. Good with a little nutritional yeast sprinkled

on it as well. Bake or nuke it as a topping on something, yum!

We cut cheese out completely for the same reasons you mentioned ,

then found this soy cheese and we really like it.

I've even had it in restaurants in Los Angeles, and here in DC. =)

Check out " Follow Your Heart " vegan cheese. It's quite delicious as far as

vegan cheese goes, and it melts!!

Cheese...my weakness too. I've been wanting to try nutritional yeast since I

heard it has a cheesy taste and is great on popcorn. As far as melting like

cheese? You got me.

That sounds yummy. The problem is they are all made from soy. I can't have soy

because of my thyroid. Any rice cheeses out there? :)

I have a recipe for a nutritional yeast cheesy sauce that works great on pizza,

grilled cheese and well, almost anywhere. No soy at all. It's microwave or

stovetop only though, so Cherrie, let me know if that's considered off topic or

if I can post it.

Karyn, no problem, just make sure to note it as not a crockpot recipe so we

don't put it in our files by accident!!!
