nutritional yeast cheesy sauce

I didn't realize people wanted cheese this bad; I've already gotten two off list

requests for this sauce, so here it is! It's from a cookbook by Bryanna Clark

Grogan, I'm not sure which one, but it was about cooking a meal in 20 minutes or

less. I absolutely love this sauce (and up until I tried it I couldn't stand

nutritonal yeast cheese sauces, that's saying something!)

 

Makes about 1 1/4 cups.

 

1 cup water

1/4 cup nutritional yeast

2 tablespoons corn starch

1 tablespoon flour

1 teaspoon lemon juice

1/2 teaspoon salt

1/4 teaspoon garlic granules (do NOT omit this, it's really important for the

taste!)

 

OPTIONAL: 2 tablespoons of water, 1 tablespoon Canola Oil.

 

STOVE TOP: Place all ingredients except water in a blender and blend until

smooth. Pour mixture in a small sauce pan and stir over medium heat until it

starts to thicken. Let bubble for 30 seconds. Whisk vigorously.

 

MICROWAVE: Pour blended mixture into a microwave safe bowl. Cover and cook on

high for 2 minutes. Whisk and add optional ingredients, then microwave for 2

more minutes. Whisk again.

 

Also; if you don't have a blender, just mix the ingredients well and cook,

that's what I do. Be careful and watch the sauce so it doesn't thicken too much,

because it's almost impossible to " un-thicken " it once it's gotten there!

 

The sauce last about a week in the fridge and is great on grilled cheese.

I've made this sauce many times, and I have never used a blender either--it

still turns out great!!

Thanks for this recipe karyn! and also the advice about freezing

seitan. Hey, since I made seitan yesterday, I may just make

nutritional yeast cheese tomorrow!

LOL-I'm glad to know I'm not the only one who's hooked on cheese! I think a lot

of people (myself included) tend to rely too heavily on cheese when they go

vegetarian, and then it's extra hard to give up if one decides to go vegan.
