Guest guest Posted February 22, 2007 Report Share Posted February 22, 2007 Slow-Cooked Tomato Sauce for Pasta Source: Robin Robertson's Fresh from the Vegetarian Slow Cooker Slow Cooker size: 4 quart Cook time: 6 hours Setting: Low Makes about 3 quarts 2 T olive oil 1 large yellow onion, chopped 1 small red bell pepper, seeded and chopped 1 med carrot, finely shredded 2 garlic cloves, minced Three 28-ounce cans crushed tomatoes 1/2 c dry red wine 1 to 2 t packed light brown sugar, to your taste 2 t dried basil 1 t dried oregano 1 t salt 1/4 t freshly ground black pepper 1. Heat the oil in a medium-size skillet under medium heat. Add the onion, bell pepper, carrot, and garlic, cover, and cook until softened, about 5 minutes. 2. Transfer the vegetable mixture to a 4-quart slow cooker.
