Spicy Black Beans with Rice and Mangoes

Here is one of the recipes I have tried out from my new acquisition -

Fresh From the Vegetarian Slow Cooker. This recipe just seemed so

unusual that I couldn't resist and I had all of the ingredients to

hand. I would never have dreamed of adding fresh mango to a savoury

dish - it was wonderful.

 

Spicy Black Beans with Rice and Mangoes

 

1 Tbsp olive oil

1 small onion, finely chopped

1/2 red bell pepper, seeded and chopped

2 garlic cloves, crushed

1 jalapeno or other hot chile, seeded and finely chopped

1/2 tsp fresh ginger, peeled and finely chopped

1/2 tsp ground cumin

1/2 tsp ground allspice

1/4 tsp dried oregano

2 x 15 oz cans of black beans, drained and rinsed

1 cup of water

1/2 tsp light brown sugar

1/2 tsp salt

1/4 tsp freshly ground black pepper

3 cups cooked white rice

2 medium mangoes, peeled and diced

 

Gently heat onion, bell pepper, garlic and chile and cook until

softened. Add ginger, cumin, allspice and oregano and cook for a

further minute. Put into the slow cooker (crockpot) and add beans,

water, brown sugar, salt and pepper. Cook on Low for 6 – 8 hours. 10

minutes before serving stir in the cooked rice and mangoes.

I made half this amount on 14/5/07 but kept the spices as per this

recipe – it was still not spicy enough for me so next time I will try

doubling the spices. The mango really brought the dish alive. I

served it with tenderstem broccoli, baby sweetcorn and sugarsnap

peas, all steamed.

Mmmm...I will definitely try that one - it sounds

delicious! And you're in Scotland! That's awesome. I

love hearing from people all over the world. (Yay

internet!) My family is Scottish and have become

obsessed (may not be a strong enough word) with

Scotland. They go to festivals and my dad has the

whole traditional Scottish attire. I don't know if

they eat the haggis...they aren't vegans, but still -

I don't think it's that appealing to most meat-eaters

either.

 

Do you have any good traditional (but veganized)

Scottish recipes? If so, I'd love to see them so that

I might get to treat my family some time.
