I am contemplating making a Christmas pudding this year, but as I've never made a pudding before using any cooking method and never cooked anything sweet in the crockpot before, I could do with some advice if anyone has experience. Guest guest Posted October 17, 2007 Report Share Posted October 17, 2007 Sorry, my first post disappeared somehow. --I've never done it but many years ago I read the cookbook that came with my mom's first crockpot. The cake section basically said put your batter in a coffee can, put the can on a rack and bake it for a few hours. I don't remember more details than that. Just that the can/baking pan should not be directly on the bottom of the crock, it should be on a a rack. You will probably be able to find a little cake-cooling rack that will fit. Steamed pudding should be pretty similar, shouldn't it? I believe you seal the pudding in--check recipes on that, I know you cover it so steam won't drip into the pudding --and you would put the pan on a rack, again, and add water to create the steam. But I have no real-life experience, just " thought experiments " from reading recipes. Also remember that puddings made with non-dairy milk really don't " set " like regular puddings do, no matter what method is used to make them. Guest guest Posted October 18, 2007 Report Share Posted October 18, 2007 I haven't made steamed pudding in a crockpot, but a quick google for " steamed pudding " crockpot turns up a number of (non-vegan) recipes that might be workable to adapt.. The recipes state that the resulting dessert is half-way between a cake and a pudding in texture. It seems the key piece of equipment is a pudding mold with a tight-fitting lid. And given that steamed puddings allegedly have a cakey-texture, it's not surprising that the (non-vegan) recipes contain egg. Possibly the Ener-G foods egg replacer would work here; I've had reasonably good results using it in baking.
