Drain the beans and place them in a 5 1/2 to 6 quart slow cooker. Add the onion, garlic, and bay leaves, if using, and enough water to cover (6 to 8 cups). Cover and cook on High for 8 to 12 hours, or longer, depending on the type of bean. Makes 5 to 6 cups. Dunno quite what little difference it is that makes it good, but . . . . I now make it up in large batches and freeze it in portions suitable for two of us. I can then add to it, changing the flavour and adding ingredients after defrosting, or it's just fine 'as is' with a sprinkle of hot sauce. Yum! I used pinto beans and also added the bayleaf. It got cooked on low instead of high as I left the crockpot on overnight and knew it would end up with more hours than the recipe called for. These beans were so mellow and tasty, and the onion pieces are to die for! Melt in your mouth. I'm thinking of buying the cookbook this recipe came from. Thanks, Chupa and Sue and River! Glad it worked for you! I don't often rave about a recipe - especially not one for beans because we all know how to cooke them, right? But that one worked better for me than anything else I've tried.
