Slow Cooker Basic Beans - 6 pts

Amount Measure Ingredient -- Preparation Method

1 pound dried beans -- picked over and rinsed

1 large yellow onion -- quartered (optional)

2 cloves garlic -- crushed (optional)

2 bay leaves -- (optional)

 

Soak the bens in enough water to cover plus an inch or two for 8 hours

or

overnight.

 

Drain the beans and place them in a 5 1/2 to 6 quart slow cooker. Add

the

onion, garlic, and bay leaves, if using, and enough water to cover (6 to

8

cups). Cover and cook on High for 8 to 12 hours, or longer, depending on

the type of bean.

 

Makes 5 to 6 cups.

Use this recipe as a guideline to slow cook basic dried

beans such as pintos, kidneys, white beans, and black-eyed

peas. If you want to flavor the beans, you can add the

onion, garlic and bay leaves. If you prefer them " as is " ,

just cook them in water and you will have beans that are

ready to use in any kind of recipe calling for cooked

2 tablespoons tamari soy sauce -- or other soy sauce

2 scallions -- minced

1 tablespoon toasted sesame oil

 

Just before serving, drain the beans and stir in the tamari, scallions,

and sesame oil.

Sue, that basic beans recipe is excellent - I've made it and been delighted!

Dunno quite

what little difference it is that makes it good, but . . . . :) I now make it up

in large batches

and freeze it in portions suitable for two of us. I can then add to it, changing

the flavour

and adding ingredients after defrosting, or it's just fine 'as is' with a

sprinkle of hot sauce.

Yum!

River, I was inspired by your post to try the basic beans recipe. I

have to agree that it is excellent! I used pinto beans and also added

the bayleaf. It got cooked on low instead of high as I left the

crockpot on overnight and knew it would end up with more hours than the

recipe called for.

 

These beans were so mellow and tasty, and the onion pieces are to die

for! Melt in your mouth. I'm thinking of buying the cookbook this

recipe came from. Thanks, Chupa and Sue and River!

Glad it worked for you! I don't often rave about a recipe - especially

not one for beans because we all know how to cooke them, right? ;)

But that one worked better for me than anything else I've tried. And

yes, the cookbook is excellent!!

it's not in the past 25 messages you can either do a Search or just hit

just look - it's right there, just a few messages before this one and

probably linked to on the same page as the first one in this thread.

 

 

That's the purpose of the archives, to find something you missed the
