(for a very large crockpot) 1 bag white beans (2-3 cups?) soaked overnight and drained 1 tbl. salt 1 tbl. mild soy sauce 1 tbl. mild green salsa 1 tsp. chipotle Tabasco sauce Most of a head of garlic, peeled and pressed 2 1/2 quarts water 5-8 white, red, or yellow-skinned potatoes, scrubbed and cut into chunks After beans are cooked: 1 bunch green onions (scallions), trimmed and chopped 1 bunch bok choy 2 tsp. lime juice, to taste pepper, to taste more salt, to taste (probably about 1 tsp.) Place beans with the first group of seasonings into a very large (7 qt?) crockpot. Cook until the beans are very tender. I'm at high altitude, so that's all day on high for me. Shortly before serving, add chopped bok choy and green onions; let cook until bok choy is just tender (it cooks quickly). Adjust seasonings to taste with lime juice, pepper, and salt. The seasonings (other than the garlic) are really pretty optional; these are things I tend to have on hand. Use your imagination.
