Guest guest Posted March 26, 2008 Report Share Posted March 26, 2008 Basic Bean Soup 1 1-lb package mixed dried beans 1 onion, chopped 3-4 cloves garlic, pressed 2 tsp. salt 2 Tbl. mild soy sauce 2 tsp. chipotle Tabasco sauce 1 Tbl. salsa 1 tsp. ground cumin ¼ cup dry (unsweetened) tapioca powder 3 quarts water 1 large can stewed tomatoes 1 Tbl. lemon or lime juice Cover dried beans with boiling water; let soak for about 45 minutes, drain, cover with cold water and let soak overnight. Drain. Combine soaked beans, water and seasonings (except lime juice and tomatoes) in a large crockpot. Cook on high until beans are tender. Add tomatoes and lime juice; taste for salt.
