I don't know who the author of this recipe is, or where I originally got

it from. If anyone knows, please let me know.

 

I had to go through my MasterCook to find a recipe that *hasn't* been

posted here in the past. So many of them come from Robin Robertson's

book, Fresh from the Vegetarian Slow Cooker, and a few from Susan V's

Fat Free Vegan web site (not the blog) http://www.fatfreevegan.com ! If

anyone has some recipes from *other* sources, PLEASE post them, and be

sure to give credit where credit is due and list the author and cookbook

it came from, if you have the info. Thanks.

 

This recipe makes up great with those steamer-made sausages from Julie

Peppered Black Beans and " Sausage "

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 onion -- chopped

1 green bell pepper -- chopped

1/3 cup water

1 teaspoon minced garlic -- fresh

45 ounces canned black beans -- drained and rinsed (3,

15-oz cans)

15 ounces tomato sauce -- canned

1 1/2 teaspoons oregano

1 1/2 teaspoons basil

1 teaspoon white pepper

1/4 teaspoon cayenne pepper

ground black pepper -- to taste

6 sausage links, meatless -- or vegetarian hot

dogs

 

 

Place the onion, bell pepper, water, and garlic in a large saucepan.

Cook,

stirring frequently, for 5 minutes. Add the remaining ingredients and

cook

over low heat for 15 minutes, stirring occasionally.

 

Recipe Hint: This may also be made in a slow cooker. Add all ingredients

at once. Cook on low for 8 hours or on high for 4 hours.
