Guest guest Posted October 18, 2008 Report Share Posted October 18, 2008 Okay, per Debbie's very appropriate request, here's a recipe I LOVE that a friend gave to me some time ago. It goes great with a fall (here in FL we will still be barbequing well into December and many times beyond!) barbeque. Hope you enjoy! God's Peace, Gayle Baked Beans with Apple Cider Serves 6 - 8 Ingredients: 2 cups assorted white beans 1 - 2 medium onions (depending on your taste for onions), finely chopped 4 large carrots OR a combination of carrots and parsnips 1 tsp salt 4 - 6 whole cloves ( use 4) 2 cloves garlic minced OR 1/4th tsp prepared minced garlic 2 tsp chili powder 1 tsp cracked peppercorns 1 piece stick cinnamon (about 2 inches) 1 cup apple cider 1/2 cup pure maple syrup 1 cup water 2 tbls cornstarch dissolved beans, in 2 tbsp cold water Directions: Soak beans either by the overnite or quick soak method. Drain (do not save water) and, rinse. Combine all ingredients in a slow cooker EXCEPT the cornstarch dissolved in 2 tbsp water. Cover and cook on low for 10 - 12 hours or high for 5 - 6 hours until the beans are tender. In a bowl, combine the dissolved cornstarch with 2 tbsp hot cooking liquid from the beans. Stir until smooth. Gradually add up to 1/4 cup of the hot bean liquid continuing to stir until smooth. Put this mixture in the beans that are in the crock pot and stir well until the sauce thickens. Hard day at school with very rambunctious children is my only excuse! It is, indeed only cornstarch dissolved in water sans the beans! Thanx for pointing that out, Sue.
