That's what I put in all my vegetable soup creations, all the older veggies I need to use up. Great name for it. We love it! 1 Box of " Imagine " brand tomato soup (vegan) 5-6 medium potatoes peeled and cubed Frozen/Fresh mixed veggies (corn/peas/carrots) Vegan Butter (to taste) Ketchup (to taste) Salt and Pepper (to taste) 1. Cook veggies according to package or steam until tender. 2. Boil cubed potatoes until just tender (not mushy). 3. In big pot, heat soup and add veggies/potatoes, then butter, ketchup, salt & pepper. 4. I throw in several cans of 15 oz tomatoes - normally stewed, veggie or No-Chicken Broth, any veggies I have on hand, onions, garlic, any sort of and hopefully a combination of beans (canned if I haven't been able to soak them), and whatever spices I feel like eating. Almost always I include bay leaves and basil as spices and might add more as I feel. I put the crock pot on low for about 6 hours. I might add a little pasta or rice that has already been cooked when it's all done but normally will just let everyone add their own when I serve it as I really don't like the way pasta or rice gets when the soup is put away as leftovers. Saute a generous bit of garlic and onion in olive oil or broth, then add tomato paste.? After this add the other veggies and let them cook down with each other, so the flavors truly meld before the water is added.? Add a little water if you need the moisture.? After the veggies are almost fully cooked, add canned tomatos if you'd like, pasta to cook, broth, basil, oregano, and any other spices to taste.? Yum!? Keep tasting until it looks perfect.
