Guest guest Posted January 5, 2009 Report Share Posted January 5, 2009 I've used many different recipes, most involving adding chopped veggies, but in a web search yesterday I found a simple formula (didn't save the link): 1 cup millet 3 1/4 cup water Bring both to boil; simmer 45 minutes. Let cool, press into desired dish (I used a loaf pan wanting " wider' slices). Didn't use any seasonings or other stuff recommended as the hoppin' john, as planned, would make my toenails sweat... plain millet to offset the killer john. In pressing the millet mixture, slightly dampening hands is useful. I think the best millet loaf is Pickarski's (using wheat gluten) and a web search will probably yield that recipe. Don't have the time to post...
