I like it with my salad at lunch, even in the summer.? I cook my dried beans in my crockpot also.? I don't own a pressure cooker.? In the heat a crockpot doesn't heat up the room like a stove does. I am about ready to make stuffed peppers.? This search has been ongoing, as I use to love my stuff peppers, when I used meat.? Then I found this seasoned rice/bean mixture from Lundberg but it's discontinued.? Since then I've tried making and seasoning my own.?I usually do a Italian theme. ?I've been disappointed each time.? I love doing stuffed peppers in a crockpot. I'll reach out and ask anyone have a killer stuffed pepper recipe.? I usually don't do the meat analogs, but rather rice and beans.? Guest guest Posted August 24, 2009 Report Share Posted August 24, 2009 I never make the same pepper recipe twice, but here's my general recipe: cooked rice or quinoa shredded carrots lentils or TVP chopped pepper scraps (i always get them after i slice the peppers up for stuffing) if more filler is needed, i add peas, corn, chopped greens, or whatever i have on hand tomato sauce, canned tomatoes, or veg broth to moisten it up (add bread crumbs if you go too far) a little nutritional yeast fresh cracked pepper thyme stuff in pepper halves and arrange on a layer of tomato sauce in cooking dish. (ive only used a crockpot once for these but i'm sure 6 hrs on low is plenty.) serve with more tomato sauce (and any extra filling that didn't fit in the peppers, because i'm a terrible judge at what i need when i'm making stuffing). my recipe always depends on what's on hand, but that's the gist of it: a tomato base with healthy carbs, protein, and whatever extra veggies are on hand, and my favorite spices. hope this gives some ideas. jennifer On Mon, Aug 24, 2009 at 7:58 AM, Faith <FerretsR1 wrote: > > > > I use my crockpot for many of my normal recipes also.?
