Polenta in the microwave

This provides a different starchy-thing to serve with crockpot stews and soups.

 

Use the biggest/tallest bowl that fits in your microwave. My microwave is large

enough that I can double this recipe.

 

In the bowl, combine

1/2 cup polenta (corn grits)

1/4 - 1/2 tsp salt

2 cups water

 

Bring to a boil in the microwave. Stir. Let sit about five minutes and stir

again.

Repeat, but let sit for about ten minutes. If the polenta isn't thick enough

yet (it should be quite thick), bring it to a boil again and stir.

 

Pour into a rectangular pan and chill overnight. Slice or cut into squares and

reheat before serving.

What a great idea! 

How many servings does it make?

Can it be eaten as a soft porridge that same night (without cooling it

overnight?) Will it be cooked enough right away, or does it need to sit and

continue " cooking " after having been microwaved?  Thank you!

I'm guessing that 1/2 cup makes about four servings.

It kind of depends on how hungry you are :-)

 

You can eat it right away as a soft porridge, but it really does continue

absorbing liquid as it cools and becomes less gritty. I think it is much better

the next day and so always prepare it ahead of time. That said, I am at high

altitude, and so your polenta may get completely cooked with less trouble (and

in less time) than mine.

 

Use a BIG bowl so it doesn't boil over in the microwave.

thank you for the tips--one more question--what size bowl do you use-- i was

thinking of using a pyrex pitcher/measuring bowl with handle that measures 8

cups

I have a HUGE 4-quart bowl. I honestly don't

know if the bowl needs to be anywhere near that

size (remember, I double the recipe), but I use

it because I have it.

 

Try the one you've got, and just keep an eye on it.

If it looks like it's going to boil over, stop the

microwave and give it a stir, and resolve to use

a larger bowl next time.
