He supported investigation of the potential uses of soybeans for both industry and food. - Studies of the health benefits of soy protein began in the early 1900's. - Soybeans were considered both a food and a medicine for centuries in Asia and were one of five " sacred " crops named nearly five centuries ago by Chinese emperor Sheng-Nung. - The first written reference to soybeans was found in a book titled " Pen-Ts'ae-Kung-Mu " written by Shen-Nung dating back to 2838BC. - The Chinese word tofu has been translated to mean " meat without bones " or " meat of the fields " . - Reportedly, soybeans first travelled to the US in the early 1800's as ballast in a Chinese ship. - Soybeans are the second largest cash crop in the US. - Total world production of soybeans is in excess of 100 million tons. - Crayons that are environmentally safe, and non-toxic can be made from soybean oil.
