Cathy,

 

I just searched through the cookbooks I listed and found this recipe in

" Easy Vegan Cooking. " I hope this comes close to what you're looking for!

 

Chocolate Cake

 

2/3 cup raw cane sugar

4 tsp cocoa or carob powder

1/2 tsp sea salt

1 1/2 cups whole wheat flour

3/4 tsp bicarbonate of soda (baking soda)

1/3 vegetable oil

1 tsp vanilla essence

2 tsp cider vinegar or wine vinegar

3/4 cup cold water

 

1) Mix thoroughly the sugar, cocoa (or carob), salt, flour, and soda in a

mixing bowl.

2) Add the oil, vanilla essence and vinegar and pour cold water over the

mixture.

3) Combine well with a fork, but do not beat.

4) Pour into two greased sandwich tins (lined if desired) and bake in a

moderate oven at 350 degrees for 30 minutes or until the cake springs back

when lightly pressed. Leave to cool thoroughly.

 

***MY NOTE: I have no idea what " sandwich tins " are!

 

Chocolate Icing

 

1/4 cup vegan margarine

3/4 cup cocoa or carob powder

4 tbs soya (soy) milk

5/6 cup raw cane sugar

1 tsp vanilla essence

 

1) Combine the first four ingredients in a saucepan and bring them to a boil

slowly, stirring constantly.

2) Boil for 1 minute.

3) Remove from heat and beat until cold. Add the vanilla essence and spread

the icing on your cake.

 

***Another note: I've not made this recipe, so cannot comment on how well it

works. :)

Dear Suzy

What a complete and utter sweetheart you are - all that effort just to pass

on a recipe! I shall now have no option but to bake this cake at the

weekend - heaven help my waistline!

p.s. sandwich tins are those shallow round tins that you would use to make a

victoria sponge or similar - not that I'm any expert
