April 11, 2000 Web posted at: 3:48 p.m. EDT (1948 GMT) ITHACA, New York -- A group of volunteers at Cornell University have spent a month chowing down on food that's out of this world. To help NASA plan the cuisine for future lunar and martian space colonies, a Cornell chef, nutritionist, food and biological engineer and vegetarian cooking teacher are collaborating to develop recipes that astronauts could prepare from a limited set of 15 to 30 crops to be grown in future space habitats, Cornell said in a statement. The 16 volunteers spent 30 days sampling tofu, tabouli and lentils, among other delicacies. Scientists came up with a menu that was low on salt and easy to prepare. It consists mainly of wheat, rice, soybeans and vegetables. They can be grown on temperature-controlled space farms of the future. A typical day's fare for the culinary volunteers included sweet potato pancakes and scrambled tofu for breakfast, lentil loaf sandwiches for lunch and tabouli salad for dinner with chocolate soy candy for dessert. One volunteer said the food was " delicious.
