Thanks, Alyssa Recipe from Gina /GVargas Out Of This World Kale Soup Ingredients: *6- 9 cups of water * 1 box of cooked squash or pumpkin, smooth and blended * 2 cups cooked legumes * 1 bunch frozen chopped kale * 2 handfuls of fresh dandelion greens (chopped) or spinach * 1 cup frozen peas 1 cup diced carrot * 1 small onion (chopped) * 1 sweet potato (cubed) * 2 handfuls of small pasta (optional) * 2 handfuls of rice (Basmati is what I use) 1 tablespoon each basil, oregano, margorum, parsley pepper 2 tsp. vegetable salt to taste Directions: First you will need a stock pot or just a good size pot. Pour 9 cups of water into the pot. Bring to a rolling boil at a medium temperature. When you see it is boiling add squash, half a can of smashed beans,the rest of the can of beans with liquid, onion, potato,kale, dandelion greens,and mixed vegetables. Boil until greens and potatoe are tender. Then add pasta, rice. A little sea or vegetable salt to taste. I like this soup because it is inexpensive, makes a large quantity and is soooo delicious!!
