Food Safety Mistakes Caught on Tape

 

Scientists put cameras in the kitchens of 100 families in Logan, Utah, who

thought they did a pretty good job. What was caught on tape in this

middle-class, well-educated college town suggests why food poisoning hits so

many Americans.

 

People skipped soap when hand-washing. Used the same towel to wipe up raw meat

juice as to dry their hands. Made a salad without washing the lettuce.

Undercooked the meat loaf. One even tasted the marinade in which bacteria-ridden

raw fish had soaked.

 

Not to mention the mom who handled raw chicken and then fixed her infant a

bottle without washing her hands.

 

Or another mom who merely rinsed her baby's juice bottle after it fell into raw

eggs - no soap against the salmonella that can lurk in eggs.

 

" Shocking, " was Utah State University nutritionist Janet Anderson's reaction.

Tougher enforcement of meat plants needed, auditors say

The new inspection system requires companies to identify potential hazards in

slaughterhouses and processing plants and implement controls for foodborne

pathogens. Previously, companies relied on USDA inspectors to find contaminated

meat by poking and sniffing it. The inspectors' job now is to ensure that the

plants are following their sanitation plans and to do some microbial testing...

 

....Plants are shipping products to consumers without testing for specific

pathogens like E. coli O157:H7 or Listeria monocytogenes even after tests for

generic versions of those bacteria are positive, the report found. And plants

aren't testing at all for some major pathogens such as campylobacter, the

auditors said...

USDA says Calif.firm recalled hams for possible Listeria

WASHINGTON (Reuters) - California firm, Demes Gourmet Corp. has voluntarily

recalled 1,800 pounds of hams that may be contaminated with Listeria

monocytogenes, a potentially deadly bacteria, the U.S. Agriculture Department

said Wednesday.
