I discovered this by accident. A package of tofu was growing older in my refrigerator, so I decided to see what would happen if I froze it before it became too old to use. I took the block of tofu out of its package, rinsed it well, then placed it in a zip-top plastic food bag. Some days later I thawed the block, then squeezed out the excess moisture and crumbled the tofu into a bowl. After marinating it in spaghetti sauce, I added it to lasagna filling. My guests loved the " seasoned ground beef " in my lasagna, and I didn't enlighten them that it was actually frozen, seasoned tofu. Firm tofu works best for freezing. You can add frozen, thawed, squeezed-out and crumbled tofu to any dish that normally calls for cooked ground beef, ground turkey or sausage. After freezing, tofu absorbs flavors better. It will take on the taste of your sauce and enhance the dish beautifully.
