Guest guest Posted September 21, 2000 Report Share Posted September 21, 2000 Being a busy gal myself, I try to keep a few staples around: - soynuts and raisins or other dired fruit - canned or frozen soup - hummous or some other spread - some sort of nut butter - a container of chopped veggies in the fridge - minute rice (nasty stuff I know, but sometimes a lifesaver) - canned or frozen beans - canned or frozen veggies - some sort of sauce or marinade - canned fruit - granola bars or homemade powerbars From this I can whip up a healthy snack or a meal in under 10 minutes: - peanut butter sandwich - tahini sandwich with alfalfa or whatever veggie is quick and handy - veggies and dip usually (hummous) - rice, beans and veggies and even have desert (fruit, granola bar etc...) Anything " makeshift " counts in this exercise. It can be nourishing, tasty, filling, or cheap. I'll start with a can of beans, (1 minute to open) or a piece of fruit (45 seconds to prepare) or rice and vegetables in a rice steamer (20 minutes?) or microwaves potato diced onto salad (9 minutes) or beans in slow cooker (cooked overnight) plus some canned or jarred spaghetti sauce All cheap, all quick, all simple.
