The mulled apple cider is a particular favourite of my daughter's. Mulled Apple Cider 2 ½ quarts apple juice in a large pot for serving. In a small pot, combine and bring to a boil ¾ cup water, 1/2 cup maple syrup, ¾ cup raisins, 4 2 ½ inch long cinnamon sticks, 8 whole cloves, 8 whole allspice, zest of 1 lemon and 1 orange, peeled off in one long thin strip, 1 sliced lemon, seeds removed. Keep warm for serving. Cashew-Carrot Loaf from the Salt Spring Island Center Cookbook 6 cups chopped carrots, 2 cups ground cashews or other nut/seed, 1 cup finely chopped leeks or onions, 1 cup finely chopped celery, 1/2 cup flour, 1 tsp sea salt, black pepper, 2 tsp. sage, 1/2 tsp. thyme, 1 tsp. basil Steam the carrots and mash, makes about 3 cups mashed. Mix all ingredients together and press into an oiled loaf pan and bake 350 degrees F for 35-45 minutes or until top edges begin to look dry. This is a very rich entree style dish, and is best served with lots of rice, squash, potatoes, salad and other steamed or roasted vegetables. The Salt Spring Island Center is a vegetarian resort on the island of Salt Spring, on the west coast of Canada. I have tended to serve Stuffed Tofu for years from Brother Ron Picarski's collection, and/or a lentil loaf, or a vegan " roast " which is basically a casserole of rice, legumes, ground seeds, vegetables and seasonings served with veggie gravy and cranberry sauce. We stopped eating meat shortly after the Thanksgiving last year. I'd like to start a tradition for my children that ALL animals can be thankful for. When I am assailed with such self-blaming feelings, I remind myself of how each step brought me along my path from where I was to where I could make the change. If I had known what I know now, back then, maybe I could have made the change sooner... but I didn't... so I didn't. Be sure to check out Tofurky http://www.tofurky.com/tofurky/default.htm and your kids might think it's fun to sponsor a turkey http://www.farmsanctuary.com/campaign/camp_turkey.htm This year I spent Thanksgiving at Farm Sanctuary http://www.farmsanctuary.com/visit/newyork.htm and got to actually hang out with the turkeys. Guest guest Posted October 21, 2000 Report Share Posted October 21, 2000 Ultimately, I should be proud I'm making the journey at all. I am 29 years old and my children are both under 5. We are Vegetarians striving to be Vegans and I find this list very educational. I wish I had had enlightened parents and love the fact that I am nurturing (what I believe) comes naturally in children---compassion. I want to start our own Thanksgiving traditions and thought I'd ask the experts. Thank you, everyone for the advice. I'm really interested in adopting a turkey and making that a tradition for my children. I'm seriously and excitedly looking into Tofurky for this year.
