Hi All,

 

With the holidays coming up, does anybody have any

favorite holiday recipes or like to share their vegan

holiday traditions? What do you traditionally make

for Thanksgiving etc.?

Hi all! Here are two of our favourites. The mulled apple cider is a particular

favourite of my daughter's.

 

 

Mulled Apple Cider

 

2 ½ quarts apple juice in a large pot for serving. In a small pot, combine and

bring to a boil ¾ cup water, 1/2 cup maple syrup, ¾

cup raisins, 4 2 ½ inch long cinnamon sticks, 8 whole cloves, 8 whole allspice,

zest of 1 lemon and 1 orange, peeled off in one long

thin strip, 1 sliced lemon, seeds removed. Keep warm for serving.

 

Cashew-Carrot Loaf from the Salt Spring Island Center Cookbook

 

 

6 cups chopped carrots, 2 cups ground cashews or other nut/seed, 1 cup finely

chopped leeks or onions, 1 cup finely chopped celery,

1/2 cup flour, 1 tsp sea salt, black pepper, 2 tsp. sage, 1/2 tsp. thyme, 1 tsp.

basil

 

Steam the carrots and mash, makes about 3 cups mashed. Mix all ingredients

together and press into an oiled loaf pan and bake 350

degrees F for 35-45 minutes or until top edges begin to look dry. This is a very

rich entree style dish, and is best served with

lots of rice, squash, potatoes, salad and other steamed or roasted vegetables.

The Salt Spring Island Center is a vegetarian resort

on the island of Salt Spring, on the west coast of Canada.

 

I have tended to serve Stuffed Tofu for years from Brother Ron Picarski's

collection, and/or a lentil loaf, or a vegan " roast " which

is basically a casserole of rice, legumes, ground seeds, vegetables and

seasonings served with veggie gravy and cranberry sauce.

 

We have usually had pie for dessert, blackberry or pecan or pumpkin, with

tofulati.

 

I also have a recipe for Wassail, if anyone would like it. Wassail is the old

Celtic toast, which means " Be well! " and was drunk

with mulled wine. I have the recipe for the mulled wine, different than the

mulled apple juice that I have included above. I use

grape juice instead, but it is still fine!

This will be our familys first Thanksgiving without

the turkey. We stopped eating meat shortly after the

Thanksgiving last year. I'd like to start a tradition

for my children that ALL animals can be thankful for.

I guess I feel somewhat shameful that I didn't begin

the journey to a clear conscience sooner.

Ah! I have similar feelings. I was 30 before I became vegan.

When I am assailed with such self-blaming feelings, I

remind myself of how each step brought me along my path from

where I was to where I could make the change. If I had known what

I know now, back then, maybe I could have made the change

sooner... but I didn't... so I didn't. You know what I mean?

:-)

This year I spent Thanksgiving at Farm Sanctuary

Ultimately, I should be proud I'm making the journey

at all. I am 29 years old and my children are both

under 5. We are Vegetarians striving to be Vegans and

I find this list very educational. I wish I had had

enlightened parents and love the fact that I am

nurturing (what I believe) comes naturally in

children---compassion. I want to start our own

Thanksgiving traditions and thought I'd ask the

experts. Thank you, everyone for the advice.

I'm really interested in adopting a turkey and making

that a tradition for my children. I'm seriously and

excitedly looking into Tofurky for this year. Also,

would love to experience a farm sanctuary sometime

with my children.
