My suggestion would be, sautee a bunch of your favourite flavourful vegetables; onions, mushrooms, bell peppers, garlic, that sort of thing, in just the minimum of oil. Make up the polenta according to instructions, then when cooked, combine with the veggies and melt through some of your favourite vegan cheese (here in the UK that would be Scheese, but I don't think you can get that anywhere else) and serve with whatever you fancy, steamed greens, lightly cooked carrots, whatever. It ends up like a really thick sauce, bursting with flavour. You can of course also let it go cold and shape or cut it into fritters and fry, but then you get a triple serving of fat which I would guess most of us would avoid. Usually. Hope you like it.
