Need food substitute ideas!

Does anyone know any good substitutes for the following, when called for in a

recipe:

 

Sweetened condensed milk?

 

Shredded cheddar cheese? (I can't find a " real " vegan shredded cheddar ~ I

only that Tofutti slices are totally vegan, but the other soy cheeses have

casein or rennet in them....unless I'm unaware of brands that don't!)
