Guest guest
Hello... Savannah Skye aka Savvy -> newbie here w/3 of my original vegan recipes... None of them are really low fat, but they are really, really good... Also, I had a really good tofurkey last night at Thanksgiving where I live... Someone bought it because they didn't have the time to make it... ....enjoy - Savannah Skye aka Savvy --- Coconut/Nut/Date Rolls ---------------------------- tools needed: - Huge bowl - Potato masher ingredients needed: - Huge amount of pitted fresh dates - Huge amount of roasted/non-salted mixed soft nuts - Huge amount of shredded coconut *note - at most health food stores, you can buy all these ingredients in bulk... *note - you can always skip the nuts for those with nut allergies... though they are better with the nuts... Steps... 1 - In large bowl mash dates with potato masher (make sure to check each date to make sure even the pitted ones are without pit) *note - If mashed dates seem too dry add just enough hot water to moisten them 2 - Crush mixed soft nuts and mix into the mashed dates 3 - Roll the date/nut mix into balls 4 - Spread out shredded coconut on table and roll the date/nut balls around until sufficiently covered with coconut Hence the name Coconut/Nut/Date Rolls... --- Oatmeal Chewies ------------------- Prep... 5 cups oatmeal (moistened with water) 3 cups chopped cashews 3 cups organic thompson raisins 8 oz jar of sorghum 1 large or 2 small bananas Pre-heat oven at 300-350 (depending on your oven) Steps... 1 - Pour oatmeal into bowl and moisten 2 - Blend banana and sorghum and then mix thoroughly into oatmeal 3 - Chop cashews and mix raisins and cashews into oatmeal mix 4 - Spoon out onto lightly oiled pan into whatever size Oatmeal Chewies you wish to bake 5 - Bake 5-8 minutes Texture will be moist, hence the name Oatmeal Chewies, a delicious, vegan, all natural sweet treat. --- Deep Fried Canndied Plantains ------------- needed: 1 big pot 1 big bottle of corn, palm or coconut oil - as many yellow w/browned spots plantains as you want to make - a box of brown sugar *note - plantains shouldn't be squishy/too soft to slice proplerly... as they don't slice well/fry well... 1) slice yellow w/browned plantains chip style while heating a pot of chosen oil to bubbling point... 2) when oil is to bubbling point pour in as much brown sugar as you want and stir well 3) then add the plantains and deep fry until they're as deep fried as you want them to be *note - the brown sugar will coat each and every plantain fully and when cooling will become " deep fried candied plantains " ... ---
