If you follow the > sephardic rules, I believe you can use tofu. Have you noticed that recipes in the Wasserman cookbooks tend to just fall apart? It's like she removed the eggs from recipes and then did not add anything else to hold stuff together. However, I have discovered that in one of the cookbooks (I think it's the _Jewish Vegetarian Year_ cookbook), there is a vegan kishke recipe that is not only delicious when prepares as directed in the book, but if you take the uncooked mix and, instead of baking it, form it into balls and drop it into soup, makes pretty good soup-balls. They don't taste anything like matzoh balls, but they do taste good (better than the eggless matzoh ball recipes I've tried), and they're kind of a compensation for not having matzoh balls.
