It comes in a powder form and I have had good luck using it for baking (cakes, pancakes, biscuits, etc.) It comes in a 16oz box for about $6. It seems to be pretty widely available in all health food stores and large grocery stores (check the natural, organic, diet or foreign sections) of the stores.
