Holiday vegetarian leftovers don't have to go to waste

CONCORD, N.H. — Chances are, you won't end up staring down a giant tub

of turkey.

 

But just because you're vegetarian doesn't mean you won't wind up with

plenty of Thanksgiving leftovers. Everyone always seems mystified by

what to do with them. That, in turn, mystifies me.
