I am a moderate lacto-ovo vegetarian, but cooks vegan style mainly. I use/make from scratch a lot of tofu and tofu-based items such as tofu cheeses and meat-substitutes, desserts, etc. I love to creatively come up with tasty recipes to fool my meat-eating guests. We entertain on a fairly frequent basis so I cook a lot. Fruit flavored, and fortified with Calcium and Vitamin C. To this you could add almost anything you'd want, from ground up chewable vitamins to Wheat Germ, pureed vegetables, etc. Just a thought. They sell them with the powdered drink mixes. You can make them with water, juice, or milk, but you need a blender that can do ice. As for Ensure, I wouldn't be too worried about it. Give them a try, or check out the competing products from other companies. They're made to be easily digested and to provide good nutrition. Ovaltine is enhanced with many vitamins and minerals and is a good general thing to drink, plus you can toss a tablespoon or two into any blended drink and it won't adversely affect things.
