Guest guest Posted June 24, 1999 Report Share Posted June 24, 1999 Hi, all. My name is Rose, I live in upstate New York, with my husband, Fred, and our 7 cats on our small 35-acre farmette. For at least half of my 51 years I've gone on and off vegetarianism. But for the last week or so I've gone vegan. The difference is incredible. I feel better. I look better. I feel more calm, more centered, and I've returned to tai chi and am learning chi kung. My only non-vegan intake are milk in my coffee and butter in my hot cereal. My goal now is to eliminate these two practices. So, I'm looking for a coffee substitute. I need to eliminate coffee from my life, but I want something interesting and " comforting " to drink that's not necessarily tea. My thoughts go to those OTHER MILKS: rice, soy, nut milks. As far as the butter in my cereal, I'm waiting for my own fruit to ripen, as well as finding organically grown sources of fruit so my cereal doesn't taste like wallpaper paste! I've also decided NOT to have goats, chickens, calves, or any such livestock. That's a major development, lemme tellya! So, I'm on the road to health and wellbeing, finally. DOES ANYONE HAVE any recipes for those other milks? How to make them? What rices are best? What does one do with the leftover stuff? Thanks. Good to be on another vegan list. The carob-flavored soy milk & the vanilla rice milk are great warm or cold. I use them in hot or cold cereal, & sometimes use juice in my hot cereals. I have never made these milks, but have seen recipes in magazines--Vegetarian Times, I think.... Seven cats...I've got 14.... Rice Milk 1 cup cooked brown rice 2 cups water 1 tablespoon maple syrup 1/2 - 1 teaspoon pure vanilla Blend ingredients thoroughly. Strain using a large meshed sieve and again using a fine meshed sieve. Bottle and refrigerate. Shake before use if milk has settled. It is rather sweet, though, and a little thicker than I really want....even when I drink regular milk, I drank 1% or 2% milk because it wasn't so thick. If you decide to try it, go with the regular first, as the Vanilla and Carob flavors are much sweeter.........Also, be forewarned: I can't speak for all over the country, but here in Atlanta, a quart of Silk runs $3.50!!!!!!! hope I was helpful, Nicole PS: I have the Vegetarian Times cookbook at home; I'll check for recipes........ >Quingem Hi, Rose, My name is Kim. Guest guest Posted June 25, 1999 Report Share Posted June 25, 1999 I checked out the Eden Soy and Rice Dreams for the " other milks. " Well, it turns out that Eden says it's an organic soy product. That may be true, but the only thing organic in it is the beans. Everything else is not. And that's a problem. So, I'll just learn how to make my own milks and tofu. I used to make cheese.
