Guest guest Posted June 26, 1999 Report Share Posted June 26, 1999 Here's a lentil burger recipe I use: SHORT VERSION: Cuisinart cooked lentils with breadcrumbs and breadbits, and an onion. Form into patties, dredge them in flour, fry until golden brown or slightly darker. About 2 minutes on each side ought to do it. I serve these with a tossed salad of greens, carrots, sunflower seeds, onions and raisins; along with a serving of basmati rice. LONG VERSION: 2 cups of dried lentils - green or brown 4 times as much water Onion cooking oil breadcrumbs/breadbits Put about a TBS of olive oil in a soup pot, heat up oil, add about a half onion and a clove or two of garlic. Cook until translucent, not burned. Add your dried lentils, stir them in that shallow oil/onion mix until beans are coated. Then add your water. Cook on high heat until boiling, then lower to medium for a rolling boil. Cook until done - usually no more than an hour. You don't want mush. You just want the lentils a tad past al dente. Pour mixture into collander, let liquid drain. While the lentil mix is draining... Heat enough cooking oil to cover the frying pan bottom. Form your patties from heaping tablespoon-sized portions of the mix. Dredge them in flour - white or whole wheat or mixed. When oil is hot, fry patties for about 2 minutes on each side or until they are golden brown or slightly darker. I use this same recipe for TOFU BURGERS, but I would splash in some soy sauce into the cuisinart. Also, lentil burgers seem to soak up more frying oil than tofu burgers. I have also used this same lentil burger recipe for BLACK BEAN BURGERS. Stuff smells great. Omnivores love 'em! I don't salt anything until it gets to my plate.
