Guest guest Posted September 12, 1999 Report Share Posted September 12, 1999 Craisin Corn Muffins mix together: 1 1/2 cup corn meal 1.2 cup all purpose flour, whole wheat preferred 1 tablespoon baking powder 1/2 teaspoon salt 2 teaspoons dried lemon or orange zest or 1 tablespoon fresh In a separate bowl combine: 1/2 cup applesauce (or about 1/3 cup vegetable oil) 1 - 8 ounce can crushed pineapple, liquid included 1 cup orange juice Blend the wet ingredients into the dry, stirring just enough to moisten evenly.
