We've been on again off again vegitarians for many years. We've finally made the commitment as a family to try it again. This time, though......I'm calling out for help. I would like to know if any of you have some good tofu recipes you would like to pass along.....of better yet, how do I get it to taste good to my kids? Slice it into about 1/32 inch slices and lay on a clean kitchen towel, cover with another towel and place a book or some light weight on top, let this stand for 10 - 20 minutes, to remove the excess water. Now you can marinate the tofu in anything you like, teriyaki sauce, BBQ sauce, soy sauce with ginger and garlic, Italian salad dressing, etc. Marinate for 20 - 30 minutes, then bake or sauté the slices. I always make lots and keep the extra in the fridge for snacks or another meal. Or a sure pleaser, smoothies: 1-12 ounce package silken tofu 1 frozen banana (peel first, then place bananas in a ziplock bag and freeze.) any fruits you like, such as berries, or peaches, etc, liquid, soy milk, or juice, and blend until smooth. To make it icier, add in some ice cubes, or frozen berries. Or, with the frozen banana, add some cocoa powder or some peanut butter. Have fun, and welcome, this list has been very quiet, maybe you will bring it back to life. Kids tend to love food that they prepare and that includes tofu. cutting it into cubes and flavoring is always yummy and putting it in the blender with maple syrup or fruit is great too, I'll post recipes as I have time. right now I'm excited about my pie crust ideas! kim aka mamatazz Quote Link to comment Share on other sites More sharing options...
Guest guest Posted March 7, 2000 Report Share Posted March 7, 2000 hi kim ... a really quick and easy way to prepare tofu that my kids absolutely love (especially my picky 5 yr old!) is called crispy fried tofu ... i cut slices of firm tofu about 3/8 inch thick, dip quickly in tamari, then coat in red star nutritional yeast (has to be red star!) and pan fry in olive oil about 5 minutes each side - a tip from learning the hard way - i use a fork to flip them, as a spatula will just scrape all the yummy yeast off them! this covers the B12 concern of another post too other than that, i usually marinate it in some tamari, sesame oil, ginger whatever you like before adding to stir frys (the marinade then becomes the stir fry sauce), crumble into tomato sauce for spaghetti, blend with soy milk and herbs/spices/nutritional yeast/dry mustard/whatever and pour over blanched brocolli/cauliflower (again, whatever your kids like) in a pie crust to make 'quiche' i've had a few flops, but have fun with it and you can always make soup with your flops! tara Quote Link to comment Share on other sites More sharing options...
