I never really know what to do with Tofu.

Start with firm, water pack, not silken, tofu, slice into

3/4 inch slices, approx, place slices on a clean kitchen

towel, another towel on top, place a medium size book on top

to press out excess water, let drain 30 - 45 minutes.

 

Prepare marinade, I like this:

about equal parts good toy sauce and medium sherry or kirin,

plenty of freshly grated ginger and crushed garlic, dash of

dark sesame oil.

 

Marinate tofu slices, or bite size cubes, in the sauce, then

bake at 350 for 20 minutes or so, or sauté in a light

vegetable oil. Eat as is, or use in a stir fry. We like

the cubes added to a mixed salad.
