It's quick and easy and it tastes great. This recipie serves 4 and takes around 45min to make. Ingredients: 1 tbs peanut oil 300g button mushrooms 1 onion cut into thin wedges 140ml coconut milk 2 tbs curry paste 300g of firm tofu cut into 500g pumpkin cut into small cubes small cubes 2 medium tomatoes chopped coriander leaves 250ml vegetable stock jasmine rice to cook: *heat oil in frypan on medium-high heat. Add onion and cook until soft, then add curry paste and stir until it becomes aromatic. *Add pumpkin, tomatoes and stock. Cover and reduce heat to a simmer. Stir occaisionally until pumpkin is just tender. *Add mushrooms, coconut milk and tofu. Cook uncovered for 10 min or until sauce thickens slightly. *Add coriander then serve with rice.
