Guest guest Posted April 5, 2000 Report Share Posted April 5, 2000 I made this this afternoon, a favorite at my house. The dates actually sort of dissolve and make a rich tasting pudding. If you prefer it sweeter, add in some brown sugar or, even better, real maple syrup. It makes a lot, you can halve the recipe if it is too much, awfully yummy, tho. Rice Pudding In a heavy bottomed pot, cook 2 cups short grain brown rice in 4 cups water. Then, add: 1 quart vanilla soy milk 1 cup coarsely shopped dates (more or less depending on how sweet you like it) 1/2 cup dark raisins or currants 2 teaspoons cinnamon (or to taste) Bring to a simmer and cook, stirring almost constantly to avoid burning, simmer and stir for 15 minutes or so, until it is very thick and creamy. Remove from the heat and add a tablespoon or so of real vanilla. Serve warm or chilled. P.S. I like to add in chopped apples, or in the summer, chopped fresh peaches.
