Guest guest Posted May 12, 2000 Report Share Posted May 12, 2000 well, i could look up the veggie times recipe (cuz i have them from 98 on) but i'll give u the one that i used.. and it came out successful with vegan substitutes... Hot Artichoke Dip -1 can (14 oz.) artichoke hearts, drained, chopped -1 cup (4 oz.) vegan parmesan cheese -1 cup Vegan Mayo (i used veganaise, but I'm sure any would work) -chopped tomato -sliced or chopped green onions Mix all ingredients except tomato and onions. Spoon into 9-inch pie plate or quiche dish. Bake at 350 degrees F for 20 to 25 minutes or until lightly browned. Sprinkle with tomato and onions, if desired. I always try to use bread squares, but crackers would work. Variations: (i haven't tried these) Spicy artichoke dip: add 1 can (4 0z.) green chilies (i would just chop a few fresh ones instead though), drained and 1 clove minced garlic. I asked, but didn't know if they ever made it into an article for their vegan recipie redo section. I keep my copies, too. I appreciate the recipie. Looks pretty simple.
