All I can come up with is tofu and stir fries which I like now, but after a few weeks, I know I am going to get bored. Where do you get your soy cheese? Does it taste anything like the real thing? Guest guest Posted June 21, 2000 Report Share Posted June 21, 2000 I was a vegetarian for twelve years before I became a vegan (eating strictly organic as well) 2 years ago. I am 30, a survivor of cervical cancer (thanks in large part to my 100% organic/vegan diet) and have never felt better (strong, clear, pure) in my life.. Here is what I eat in a typical day: Breakfast: 35% fruit meuseli w/soy milk OR fresh fruit and dry, toasted bagel Lunch: salad (all kinds of greens + other fresh vegetables) w/soy dressing; tofu, tempeh, seitan, beans/rice, or other similar high-protein source; fresh fruit (2-3 different pieces) Dinner: fresh or steamed vegetables (almost any veg will do) with rice or pasta (I love vegan ravioli that I found in my health food's frozen section, although I try to do fresh/steamed vs. frozen in general), soy yogurt (we prefer Whole Soy brand--it tastes just like cow's milk yogurt) or soy ice cream (we like Soy Delicious brand...again, tastes just like cow's milk ice cream) or fresh fruit for dessert I drink water almost exclusively (with the exception of an occasional small glass of soy milk or fruit juice)--at least 8 large glasses daily. This is very important! My husband, who has been an off-and-on vegetarian for several years before he met me, independently adopted my organic/vegan choices (another victory for inspiration by example) and professes that he, too, has never felt better. He is a dairy connoisseur and LOVES the Whole Soy yogurt, Soy Delicious ice cream, and almost any brand of soy milk. Because we both have " snack habits, " we buy vegan/organic corn or soy chips & salsa, popcorn, chocolate chips for cookies, etc., but try to keep these to a minimum. I also occasionally make recipes (casseroles, soups, cakes, cookies, etc.) from one of my vegan cookbooks (or I modify to vegan from my vegetarian cookbooks). And we to an organic produce delivery service--we receive a box of organic fruits and vegetables every week (cheaper than health food store and more convenient) and they always enclose recipes to use with the weekly produce--very helpful. Also, this is a great way to prepare/eat some fruits & vegetables that we might not think to buy in the store (I used to be intimidated by seemingly difficult-to-prepare items like eggplant, artichoke, turnips, etc.). Toasted sesame bagel, open face, spread generously with hummus, top with sliced tomato, sliced onion and a handful of alfalfa sprouts. Lunch a chopped salad: celery, red bell pepper, tomato, can't remember what else, and a couple tofu pups sliced in, Annie's Natural's brand salad dressing. She has several that are vegan and wonderful. Dinner Steamed Indian Basmati rice. Steamed kale with garlic sort of a tofu scramble, I do it different every time-- it went something like this: large skillet, a dollop of olive oil, a couple of hot fresh chilies, minced, some curry powder, all cooked in the oil, add in a couple stalks of celery, sliced. One pound or so of firm tofu, I put it in the cutting board ten take a large fork and mash it up, add it to the skillet and mixed with the flavors already there, let simmer for a few minutes, add in some chopped flat leaf parsley and sliced scallions and a diced tomato. Then, before bed I was hungry, made a bowl of fruit salad, strawberries, peaches, banana, added some walnuts and vanilla soy milk. For lunch I had a bowl of lentil soup and two apricots. For dinner I had a third of a cantaloupe, whole wheat organic pasta with beans, collard greens and beets as a side dish. The pasta and beans is a staple of mine. I eat it the way some people eat rice and beans. It's the core of my dinner. Then I cook a couple of fresh vegetables as side dishes. The collard greens are cooked by steaming them for about ten minutes over a low boil. Then I gently saute them in a little olive oil for a couple of minutes. The beets I just cook in a pot with a little water until tender and the most of the water boils off. Then I add a little flax seed oil. Organic beets taste better than non-organic. There are a million variations on lentil soup. My favorite includes rice, peas, chopped spinach, onions, garlic, and carrots. I am aswell new to the list, my name is Ute and I live in Berlin/Germany. I am a vegetarian for 1 year and 3 months and vegan for 1 year (in July). Usually I ate great protions of food - but nevertheless I actually lost 4 kg in 1 year of weight - yeah and my skin looks aswell better as Dolly mentioned it. And the shape of the body changes to to better. Since the beginning of this week I started to eat smaller portions of food but a bit more often to have always enough energy. And I tend to eat more when I have stress - and I have a great bunch of stress now. Wendsday: breakfast: a bowl of wheat cereales with soy milk and some apple puree. lunch: some chinese eggfree noodles with some bell pepper, bamboo-sprouts, mushrooms, carrot and onions tea: 1 piece of vegan chocolate cake with a yummy tofu cream (you find it at http://www.ivu.org - they have a recipe index there) dinner: cooked rice with some vanilla and peaches and lychees added including some of the juice and strawberries (extra) later in the evening: 1 sandwich with soy-cheese, vegan mayonaise, vegan " ham " and cucumber Today (Thursday) breakfast: 2 slices of bread with marmalade lunch: rest of the rice of yesterday I'll think I am doing some baked potatoes for dinner with a tofu-cream (instead of cows-milk-curd with herbs as they like to eat it in Germany) Just put the tofu to a food blender, add herbs you like (I love basil, thyme and dill) add salt and pepper to taste, maybe some garlic and some soymilk to make it smooth. And sometimes I love to make juice out of fresh carrots. And in drinking I live on green tea ) (Any limits for mails on this list?)
