Jan Rice Pudding In a heavy bottomed pot, cook 2 cups short grain brown rice in 4 cups water. (short grain rice is creamier) Then, add: 4 - 6 cups vanilla soy milk - depending on how creamy you like it 1 cup coarsely chopped dates (more or less depending on how sweet you like it) 1/2 cup dark raisins or currants 2 teaspoons cinnamon (or to taste) Bring to a simmer and cook, stirring almost constantly to avoid burning, simmer and stir for 15 or 20 minutes, until it is very thick and creamy. Remove from the heat and add a tablespoon or so of real vanilla. The date pretty much disintegrate and just make the pudding sweet and rich. You don't notice chunks of dates in it. Serve warm or chilled. I like to pour some good vanilla soy milk over it, Vanilla Silk is yummy. P.S. I like to add in chopped apples, or in the summer, chopped fresh peaches.
