Breakfast-strawberries and fat free granola with a little soymilk

orange juice and coffee

Lunch-leftover mushroom and seitan stew over rice, raw carrots and broccoli

Dinner BLT with soy baco , vegenaise spinach and whole wheat bread. Fruit

salad with strawberries, banana, nectarine and grapes.

N.B. t was scorching today, so cooking was not on my agenda.

It is often hard to plan ahead for eating at work. I start at 530 am, so I

end up bringing stuff for breakfast and lunch. If I forget, and have to dash

to the market, fruit, fresh finger veg like carrots green beans, snowpeas,

cut up broccoli, hummus or refries, and ww pita or tortilla can make a quick

meal. Vegan eating is not all meat subs and strange juice concoctions.

Everyday meals, especially in summer, can be amazingly varied, simple and

easy to prepare. With a core plantbased diet of wholegrain foods, legumes,

vegetables and fruits, all the rest is gravy =)
